This 2 days will focus on an Entremet, including multiple recipes and technics, ie: Biscuit base, Crémeux, Glacage, Bavarois and Chocolate tempering, to name a few. Technic you will be able to adapt to different desserts.
Photo is a reference to previous work, as flavour regularly changes.
All day classes will include a light lunch.
